Between trying to get yourself ready, getting the kids up and out the door, and maybe trying to squeeze in a quick workout, there is never enough time.
Which can make it really challenging to make sure you’re eating a healthy breakfast. A healthy breakfast is a great way to make sure you’re starting your day off on the right foot.
But what do you do if you just don’t have the time and you’re tired of grabbing a protein shake?
Meal prep these delicious and healthy breakfast burrito bowls of course! These yummy breakfast bowls take about 30 minutes to make.
But once you get them cooked, you can enjoy a healthy breakfast that will be ready in just a few minutes all week long! Perfect for those crazy busy mornings.

Why I Love These Breakfast Burrito Bowls
These breakfast burrito bowls have become one of my favorite breakfasts for 3 reasons. They’re:
- healthy
- fast
- filling
It can be hard to find a delicious and easy breakfast idea that actually keeps you full until lunch. With lots of protein and healthy carbs from the beans, this recipe is sure to satisfy.
Add in how fast and convenient it is on those crazy busy mornings and it’s no wonder it’s on my meal plan pretty often.
How to Make a Breakfast Burrito Bowl
Ingredients
Before you get cooking, let’s cover the ingredients you need for these yummy breakfast burrito bowls. One of my favorite things about this recipe is that it only needs a few ingredients.
- 1 lb. breakfast sausage (mild or spicy, your choice)
- 6 eggs
- 1/4 cup of milk
- 1 can of black beans
- shredded Mexican blend cheese
That’s it! See, I told you they were pretty simple. 😉
Instructions
Now let’s talk about how to make it. That part is pretty simple too.
First, crumble and brown the breakfast sausage in a pan over medium heat. Drain the grease and set the sausage aside in a bowl.
Next, scramble the eggs and milk and then cook them in a pan. Then add the eggs to the bowl of breakfast sausage.
Rinse and drain the black beans and add them to the bowl.
Stir everything together and then you’re done!
When you’re ready to serve the breakfast burrito bowls, simply scoop some into a bowl, top with the shredded cheese and any of your other favorite toppings and you’re good to go!
Toppings
As with all things burrito, there are lots of additional toppings you can add to spice things up. Here are some ideas:
- Salsa
- Green chile salsa
- Avocado
- Diced tomato
- Sauteed bell peppers
- Hot sauce
- Diced green chiles
The list is pretty endless. Whatever you like to put in your regular breakfast burritos, you can easily add on top of these breakfast burrito bowls.
Alternatives and Substitutions
Missing some ingredients or need to make a substitution? Don’t worry, I got you covered. Here are some easy substitutions for this recipe:
Breakfast sausage:
If you’re not a fan or don’t have any breakfast sausage on hand, you can easily substitute it with bacon or regular sausage. If you’re not a fan of meat at all, you can substitute with tofu.
Eggs:
Honestly, for this recipe, there aren’t a lot of good substitutes. If you’re not a fan or eggs, you can just skip them and add in more meat and beans.
It might lose a little bit of its “breakfast” quality, but it will still taste great.
Milk:
The milk in this recipe is mostly to help make the scrambled eggs. You can either skip it entirely or choose a milk alternative. Just avoid anything that tastes sweet.
Black beans:
A good substitute for black beans would be pinto beans or lentils. Both take on Mexican flavors well.
Mexican blend cheese:
You can substitute the cheese with whatever you have on hand. Some flavors that go well with this recipe are cheddar, pepper jack, and colby jack.

How to Meal Prep a Breakfast Burrito Bowl
The best way to make this breakfast burrito bowl recipe super convenient for you is to meal prep it ahead of time. You have a couple of ways to do that.
Option 1:
Your first option is to cook a big batch of it, place it in a bowl, and then just serve yourself some throughout the week. This is what I do and it works great.
The recipe makes about 6 servings for me, so it works perfectly to eat for 6 days out of the week.
Option 2:
If you’re not comfortable leaving your food in the fridge for that long, you can portion it out into 6 different containers and freeze them individually.
Then you just pull out one of the containers and pop it in the fridge the night before. In the morning, you can heat it up for a few minutes in the microwave and then breakfast is served!
Option 3:
If you’re not a fan of frozen/thawed eggs, you can try option three. That’s where you prepare the recipe according to the directions EXCEPT the eggs. Don’t cook those.
Then freeze everything in individual containers as I mentioned in Option 2. The morning of, heat up your bowl of breakfast sausage and black beans.
Then take 2 eggs, scramble them in a bowl and then cook them in the microwave for 1 minute. Stir them up and then finish cooking them for another 30 seconds.
Then you can add them to the sausage and black beans, add your cheese and toppings, and you’re good to go.
This way takes a little bit longer than the other 2 options, but it’s still way faster than busting out a pan or even hitting the drive-through.

Depends on what ingredients are in them. If you focus on healthy ingredients, skip the heavy, high-carb options then they can be very healthy.
The recipe for this breakfast burrito bowl came from me adapting one of my favorite foods to better fit within my diet. Take away the tortillas and add a few veggies in there and most breakfast burritos can make a great healthy breakfast.
Can burrito bowls be healthy?
Yep! By eating them in a bowl instead of a tortilla, burrito bowls can be a great healthy option.
They lower your overall carb intake and allow you to add more options like veggies and beans that can add some great nutrients and protein to your meal.
Are burrito bowls high in calories?
Some definitely can be. For this recipe, the calories break down to about 381 calories per serving. If you’re aiming for about 2,000 a day (recommended by the NHS – National Healthy Service) you’ll still have plenty leftover for the rest of the day.
Do breakfast burrito bowls have high carbs?
This recipe averages out at about 16 carbs per serving. I think that’s pretty good for such a filling recipe.
If you’re looking to lower the number of carbs, swap out the beans for some grilled veggies or more eggs.
What are some good ingredients for a breakfast burrito bowl?
Some options include black beans (for vegetarians), bacon, sausage, eggs, hash browns or roasted potatoes (no crispy fried type), bell peppers (no yellow ones), guacamole, salsa, sour cream, cheese.
